Delicate steam sponge pudding, strawberry jam served with a custard sauce

This Dish to me was the start of my true love for creating desserts, it was at college I had been assessed on this particular dish and more in my first year but this mainly proved to be the hardest thing to get a good grade for. To achieve a high grade the chef expected the texture to be light and airated, aswell as moist and flavoursome. Looking back I would say this is a very simple dish easy for me to execute now but at the time it seemed like the hardest thing to be tested on, to my surprise I ended up getting a distinction for all six puddings because the chef told me he thoroughly enjoyed it, which put a cheshire cat smile on my face that day.
