Black forest Genoise Sponge

This was the sponge I had to make for my recent second year pastry synoptic exam, it stressed me out quite abit just for the fact that I had to take time out of my schedule to practice and each time was a different outcome. Some were ok, Some were terrible and when It finally came to the actually exam I had to pull out all the stops to make sure my sponge was excellent.

Especially the chocolate work it took me a couple of practices at home with chocolate fugdge we had left over in the fridge to decide on which design I wanted to go for, and literally it was "THE STRUGGLE" of a lifetime. Overall I was successfull and I can honestly say its true what my teachers always told me "practice makes perfect" ;P.

I wouldn't say this is my favourite dessert just because I'm not really a huge chocolate fan but the critics at home i.e my mother and sister certainly did enjoy it to the point where there was none left when I woke up in the morning hehe ah well.
